Today for lunch, was Mark Bittman's Spiced Red Lentil Dal. I can't get enough of this stuff. It is filling. It is delicious. Healthy. And, before I start to sound like I'm selling an As Seen On TV, martini, bikini item, just go ahead and try it. I like to make it in large batches, and freeze it in individual servings for lunch. However, I do have to disagree with Mark Bittman; butter is never, ever optional.

I love Bittman's recipes and generally trust him on all accounts. But you're right. If a recipe asks for butter, you can bet that I'm using it!
